Biebereis is a small ice cream manufactory in the heart of Weimar with homemade organic ice cream and selfrolled ice cream cones. Togehter with his business partmer Flavia Pinto de Carvalho, Felix Bieber offers fresh macarons, cakes and tarts as well as various types of coffee every day in addition to the ice cream scoops.

Felix Bieber came to Weimar to study media art. During his studies, he began to produce various types of ice cream at home. He financed the first machines from small reserves, he had earned himself . The initially funny idea of producing and selling ice cream quickly turned into a business model. Two ERDF grants made it it possible for him to purchase a large freezer with an integrated blast freezer as well as a professional ice cream machine. He was also able to open two locations in Weimar: a manufactury with an integrated café and an ice cream parlour, where he can offer high-quality, organic and sustainably produced ice cream.
